Happy Appy

If you come over to my house for a dinner party and get something other than a pie for dessert, you know something's up because I love baking pies.


I love fruit pies, chocolate pies, sugary pies, tarts of all kinds, citrus pies, cream pies, and any other possible pie you can think of.


But have you ever come to someone's house and received a pie for an appetizer?  Would someone ever do that? Dessert before dinner?


Well look no further because here I am, the bringer of sweet tarts for a happy appy!


And the best part is that this little recipe is a quick one to throw together. Not to mention, there are only four ingredients in total!


So why wait? Get your friends over, make them a sweet treat to wet their palates before dinner, and fake them out when they hear how easy these are to make --- if you share the easy recipe!



One Bite Raspberry Cheesecake Fakes


  • sheet of frozen puff pastry
  • 12 tsp. of Philadelphia Light Cream Cheese
  • 12 tsp. of raspberry jam
  • 24 fresh raspberries
Steps
  1. Let puff pastry sheet defrost on your counter for 20 minutes, or until it's soft enough to roll out and cut into squares.
  2. While puff pastry is defrosting, preheat oven to 350 degrees and grease 2 mini muffin tins.
  3. Once defrosted, roll puff pastry sheet a little thinner and cut into 24 even squares.
  4. Place one square piece of puff pastry into each greased section of the mini muffin tins.
  5. Spoon a 1/2 teaspoon of jam inside of each piece of puff pastry and top with a 1/2 teaspoon of Philadelphia Light Cream Cheese.
  6. Bake for about 20-30 minutes or until the jam starts to bubble and the puff pastry begins to brown.
  7. Let the One Bite Raspberry Cheesecake Fakes cool in the mini muffin tins for a few minutes and then remove them from the tins with a small spoon and place on a serving tray.
  8. Top each with a fresh raspberry and enjoy!
