Stuff It

Putting yourself out there on the Internet can be hard because people can say whatever they want anonymously. I am lucky that most people have only had good things to say about my posts, recipes, and videos, but every negative comment still hurts. 

So this recipe is for everyone out there that wants to say something bad to someone else on the Internet. I'm telling you to stuff it. Unless you're telling us constructive criticism, we don't want to hear your negative comments.

But because I am nice, despite any negativity, this is an awesome recipe. So even if you don't want to tell someone to stuff it, you really should make these stuffed peppers!

Cheesy Chicken Stuffed Peppers

6 sweet peppers
1 can of whole tomatoes, drained and roughly chopped
1 medium onion, finely chopped
4 cloves of garlic, minced
1 pound of ground chicken or turkey
1 tablespoon olive oil
1 tablespoon oregano, finely chopped
2 cups cooked brown rice
2 cups cheddar cheese, grated and divided
1/4 cup fresh cilantro, roughly chopped
2 tablespoons lime juice
1 teaspoon chili flakes
Salt and pepper to taste

1. Preheat broiler to high and place all peppers on a cookie sheet. Allow pepper to blister and blacken on all sides, turning them every few minutes with tongs. This should take about 2 minutes per side. 

2. While peppers are roasting, start your filling. In a large pot on the stove, add the olive oil, onion, garlic, and ground poultry. All onion to sweat and ground poultry to brown. 

3. Next add in the tomatoes and oregano. Stir mixture to combine and let the tomatoes cook down and get a little saucy, about 10-15 minutes. 

4. Remove the peppers from the oven and let them cool before peeling the blackened skin off. 

5. Next add the rice, cilantro, lime juice, chili flakes and one cup of the grated cheese to the tomato mixture. Stir to combine and season to taste with salt and pepper. 

6. When the peppers are cool enough to touch, peel the skin off each one, carefully slice into each pepper, and remove the seeds.

7. Place the peppers into a baking dish and divide the rice mixture into each pepper to fill it. Top with a little more grated cheddar and place back into the broiler until the cheese is melted and delicious. Enjoy!

 Luke always likes my cooking, but this meal made him happier than most. He loved it!
