Cold and Fresh

Summer is here and to me this means it's time to entertain friends. I love to entertain and I always want to serve something memorable, but it's hard to find the time to make memorable things. 

Today's recipe is a drink that's perfect for summer entertaining because it has only a few ingredients and it's cold and fresh! Plus, it isn't too much work because you make all the drinks in one big batch and you can do it all ahead of time!

Well, I guess it's more work than chilling and opening a bottle of wine, but who's going to remember that?

Watermelon Frosty - serves eight

1/2 of a medium - large watermelon, cut into one inch chunks (about six - eight cups in total)
1/4 cup fresh lemon juice
Coconut rum, use as much or as little as you like (or gingerale if you want a non-alcoholic version)
Lime wedges, for garnish

1. Use a blender or an immersion blender and puree the watermelon until smooth.

2. Stir in the lemon juice.

3. Add to an ice cream maker and follow the instructions that came with the machine. My machine told me to press the on button and let the mixture stir itself for about 25 minutes.

4. Put the mixture into the freezer if you are not going to serve your drinks immediately, or if you are ready for a cold, fresh beverage, fill a glass about 3/4 full with some Watermelon Frosty.

5. Top your glass with some coconut rum, gingerale, or a combination of the two, stir to combine, and garnish your glass with a lime wedge. Enjoy!

If you like this idea but don't have an ice cream maker, try Life Made Delicious's version. Their Watermelon Cooler is made by freezing one inch chunks of watermelon and then pureeing them in your blender!
