Speedy Desserts Guest Post on Hungry Little Girl

Yesterday I guest posted on Hungry Little Girl and I just had to share the recipe with all of you today. It's super quick to make, plus it tastes amazing. And when I say quick, I mean quick - it's a microwaveable chocolate cake that cooks in the microwave for 90 short seconds!

Microwavable Chocolate Marshmallow Cakes - makes 2

Cake Ingredients 

1 egg, separated 
2 tablespoons flour
1 tablespoon cocoa 
2 tablespoons cream cheese, creamed kind not from a brick
2 tablespoons sugar
2 tablespoons milk
1 small pinch of salt 
2 paper cups, not styrofoam 

Icing Ingredients 

1/4 cup icing sugar
2 tablespoons cream cheese, creamed kind not from a brick
1 tablespoon cocoa 
1/4 cup mini marshmallows 
A few drops of milk

1. Start by beating your egg white into stiff peaks in one bowl. 

2. In another bowl, cream cream cheese and sugar. Add in the egg yolk, milk, and salt. Stir to combine and then stir in cocoa and flour. 

3. Gently fold the cocoa mixture into your beaten egg whites. Fold just until the batter is smooth with no whites showing. 

4. Use a knife and poke three holes into the bottom of both paper cups and divide batter between the two cups. Microwave on high for about 90 seconds. 

5. While the cakes are "baking", make your icing. Cream together the icing sugar, cream cheese, and cocoa. Add a few drops of milk if necessary and stir in all but six mini marshmallows. 

6. When cakes are finished "baking", run a butter knife along the edges of the cups, empty onto a cutting board and cut in half horizontally. Put the wider half of each cake on a plate, top with some of the icing and a few of the still white mini marshmallows, and sandwich the top of the cakes on top. Save a little of the icing for the glaze. 

7. Add a few drops more milk to the remaining icing and drizzle it over each cake. Enjoy!

If you want to double the recipe, just be sure to only "bake" two cakes at once. The power of microwaves is only so strong.
